4:30pm

Supper

Chef's salad and Italian bread pepperoni pizza

Sweet Italian Bread .70 cents
topped with fat free ranch dressing .25 cents
24 slices pepperonis .50 cents
1 cup shredded casserole cheese $1.00

Chefs salad
bag of salad $1.50
pkg sliced honey turkey .59 cents
pkg sliced ham .59 cents
homemade croutons- Free
1 cup casserole cheese $1.00
4 medium hard boiled eggs .40 cents
fat free ranch dressing .25 cents
shredded carrots (leftover)- Free

Total cost: $6.53
Serves 4 slices of Italian bread pizza
and
about 8- 1 cup salads

Cost for 4 servings of pizza & 4 small salads for supper
and 4 servings of additional salad for lunch tomorrow
so 2 meals at a cost of .81 cents per person.

I know pizza is probably not the best healthy
food for ya. Having one slice along side
a salad I wouldn't think would be too bad
as opposed to eating about 4 slices
of pizza in one sitting.

You can't deprive yourself of food
that you love to eat. You'll only
crave them more. But when you eat
those foods in small amounts every once
in awhile then your craving goes away.

I am glad to announce that my
one son who wouldn't touch
salad with a ten foot pole actually
ate a half bowl of chef's salad tonight!!
And I actually told him all he
had to do was eat a couple bites
to try it!

I feel like I am making a little
progress of trying to get the kids to
eat foods that they say they do not like.
A little progress is better than no progress.

Columbus got about 4-5 inches of snow yesterday.
Christopher shoveled our walks again today.
Good exercise for him.

5:45pm

Sitting here watching
Scary Movie 4 on Commedy channel.
This movie is HILARIOUS!!

------------------------

I'm having a hard time trying
to understand our income taxes.
I guess I don't get why we're getting
back about $1400 less than last year.
(I calculated wrong the other day
thinking it was less but after looking
through paperwork this is the correct amount)
The pay was around the same only
a $158.00 increase from last year.
We also added in the $2000 prize money
I got. And the guy said we treat that money
just like it was earned money that it
has no special prize tax with it.
If that extra $2,000 caused the
difference of $1400 in our tax refund
it would be like I only got $600
as the prize if you look at it that way.

Would $2,000 make that much of
a difference in income to receive
about $1400 less than last years refund???
We don't claim any dependents (file single)
so they take out the greatest amount
in taxes each paycheck.

I don't understand taxes and that's
why I have someone else do it for us.
But for some reason this year something
doesn't seem right and that is why
I am questioning things right now.

Then the guy at H&R block says,
don't worry about city taxes, we won't
do those because more than likely
they took out the correct amount.
I spoke up then! While, like I said
I don't know much about taxes,
The IRS has come back to haunt
us years later to say we didn't
have the correct amount taken out
in city taxes and we had to pay that difference.
I flat out told him to double check
it just to make sure.

The guy at H&R block didn't seem
with it. It was someone we hadn't
dealt with before. Usually we've
been dealing with one lady there
for the past couple of years.
When he has to get up from the desk
and leave us sitting there to question
someone else about our taxes,
then that makes me start wondering.

So do we go back to this guy at
the end of February since he started
our taxes and is supposed to finish
them then. Or do we request the same
lady we've been dealing with for the
past couple of years?
I am seriously thinking about canceling
our appointment with the one guy!

---------------------------

Oh yeah, I wanted to say
I got good news today.
While I got the bill for the ambulance
ride yesterday that was almost
$700, today the insurance sent
a letter to cover most of that expense
except for about $58 give or take.
Lol, I can deal with that amount.
Heck that is less than what they
charged me for mileage to the hospital.

My head is hurting trying
to figure stuff out.
I'm still pondering over
that $1400 difference in our tax refund!!
That's a lot of money not to have.
I still hear the guy telling us
it was because of the extra $2000
that, that was the reason for it.
So if you make an extra $2000
they tax $1400 of it?????
AHHHHHHH I don't understand!!!!

Ok one more thing since I'm on a roll.
Why does last year's tax statement
include bank fees as part of what
we paid to have our taxes done.
We didn't get any rapid refund.
So are they charging us to have
a check deposited into our bank account.
If so this is ridiculous. This is our money
they owe us. Why charge us to give us
back our money that was loaned to
them in the first place by all tax payers.

Head's spinning so will head to
bed. I hate not being knowledgeable
in taxes.

1-21-11

No Columbus City schools today
due to snow and temperatures.
Wind chills could get to -10 today
with wind gusts.

--------------------------------

I saved a V8 tomato juice bottle
to make frozen fruit juice
from a can in. It's the perfect sized
bottle when it comes to ounces.
It's actually pretty looking once
the wrapper has been removed.
I let my frozen juice first thaw in the fridge.
Then use a liquid measuring cup
with a spout to be able to
pour it into the bottle.
The best juices to buy frozen in the cans
are ones that say 100% juice
like Old Orchard or even Juicy Juice
which I think are found in the isle
with other non frozen juices in the bottles.
There is a sugar content on those bottles/cans
but I think it is the natural sugar produced
by the fruits themselves and not
added refined sugar.
I've always had a hard time with
nutrition labels when it comes to
natural fruit sugar and regular sugar.
To help better explain the differences
go HERE to read more.

When reading a food label and seeing
the ingredients, they are listed in
order of the most used ingredient
to the least used.

When reading a nutrition label it can
be hard to figure out what has sugar in
it or not as manufacturer's use
different names for it.
If you see any of these in the ingredients
it means sugar:
  • Agave nectar
  • Brown sugar
  • Cane crystals
  • Cane sugar
  • Corn sweetener
  • Corn syrup
  • Crystalline fructose
  • Dextrose
  • Evaporated cane juice
  • Fructose
  • Fruit juice concentrates
  • Glucose
  • High-fructose corn syrup
  • Honey
  • Invert sugar
  • Lactose
  • Maltose
  • Malt syrup
  • Molasses
  • Raw sugar
  • Sucrose
  • Sugar
  • Syrup

A nutrition label usually shows
only one serving so be sure to read
how many servings that food item has
and times that by the amount on the food
label.
An example would be this:
I picked up a bottle of tea at Speedway
and saw that it had 25 grams of sugar.
Then I saw it had 4 servings.
4 x's 25 is 100 grams of sugar
for someone drinking that entire bottle!!

FAT

Fat has 9 Calories per gram,
and protein and carbohydrate have 4 Calories per gram.

FIBER

You think you're eating good choosing
breads that say wheat on them.
Not good! Most all breads are made from wheat.
In order for it to be healthy
for you it must say Whole Grains!!
To make white bread, the wheat
goes through a "bleaching" process
to remove the coloring.
Unbleached flour can give the coloring
of wheat bread.
So make sure your food items
say WHOLE GRAINS or
MULTIGRAIN.

-----------------------------

9:40am

We might go brave the cold and snow
today to get our taxes done.
Put the truck into 4x4 and do it.

Most employers send out the tax
info January 31st. So by doing it during
the week and before then, maybe
the wait won't be so bad.
We do have an appointment made from
last year for the end of February
but think we will cancel that and
try to do a walk in instead
and get it done and out of the way.

We used to do a rapid refund which
can be quite costly! But those were
the days where we were broker than broke
and needed the money yesterday.
We haven't been doing it to save money.
Plus by doing taxes now instead of
a month from now, we can get our return
back sooner and start working
on paying off hospital bills!!

We were hoping there was school today
so we wouldn't have to take kids
with us to H&R Block.
We'll just have to grin and bear it
as usual. I usually tell the kids to
bring a tote along of things they
can do. Also put in the tote something
to drink and a snack for them or
they'll drive you nuts saying they are
hungry or thirsty while waiting!!

Well I need to go round up all
the paperwork to take with us.
To keep all tax records in one place
I put them in one of those accordian
file keepers so I don't loose them
and label the front taxes.
I put them in chronological order
and take the whole folder with us
should they have any questions.
Plus it has all the information from
last year that they can use.

-------------------------------

3:15pm

Just returned from having our taxes
almost, notice the word almost.
Come to find out we can't get them
done til middle to the end of February
due to the loan we got with the house.
Kinda sucks and wish someone
would have told us this ahead of time
with all the waiting we did today.
Well at least most of our paperwork
is done. So have to wait
more than a month from now
to get the paperwork submitted.
Then another week to two
for money. So that really sucks!
And because Tony made $2,000 more
this year meant that we got $1,100 to $1,200
less back which also sucks.
That's a first because we usually
get back a little more each year.
Kind of bummed at the moment
but what can ya do.
I did have an idea to try to make up
for that amount but not quite sure how
much it would help out.
We donate allot of items each year
and what I would need to do is start
keeping track of it all and it's value.
Sometimes meaning keeping a book
of each item, value and a photo.
So maybe I should start doing that
this year as well since I am still weeding
out the basement getting rid of things.
Kind of a pain in the rear but
may actually be helpful in the end.

And you would need to donate
to a place like a thrift store, Kidney Foundation
and places of the sort where they
give you receipts.

Once through the door when we returned
home I got the fish fillets in the crock.
This isn't a recipe I found, just
something I threw together that sounded good.
Put a little teriyaki marinade on
a sheet of aluminum foil.
Put more marinade on top of fillet
and sprinkled with Mrs. Dash seasoning.
Topped with green giant teriyaki veggies.
Wrapped everything up with
the aluminum foil.
Placed over top some
crushed up cans in the bottom
crock and a little water.
Set it on high and will let it
cook for a couple hours til supper time.

---------------------------------

I am reading, actually browsing,
my first digital book,
Atkins Diabetes Revolution.
Got an email yesterday saying
it was ready for download.
I had the option to check it out for
1 or 2 weeks.
It's just like looking through a book
with all photos included.

Oh I almost forgot to add this from
earlier today.

You all know that our tax prepration didn't go
well and we should of took the bad sign
we got right before arriving there.

Out of thousands of places to stop
and grab a bite to eat around Columbus
we decided to get a quick bite of the
value menu at Burger King.
I know, not good for the diet.
Got our food, eating away taking
a moment to relax, sitting by the window
watching the world go by.
See this black Dodge pickup with lights
on top pull up
into the parking lot and felt a sudden
urge to puke.
It's my ex and he pulls in next to
our truck and has another guy with him.
We were in the atrium part of the
dining area and are not seen
from the rest of the restraunt.
We see him come in and head to
the bathroom.
We grabbed our remaining food
and darted out of the place before
he saw us.
What's odd about this.
He lives on the South end of
Columbus and we are up North and
stopped in a Clintonville Burger King.

6:55pm

Supper turned out really good!
All 4 food groups and nutritious for you.
Had a side of fettucini alfredo with the fish
and veggies.

--------------------------

I just got the ambulance bill
for my trip to the hospital in November.
Anyone care to guess how much
it is to ride in an ambulance?
I think next time I'll crawl!
My insurance hasn't covered
any of it so far, so need to be making
a phone call Monday to them about it.
It says they submitted it to the insurance
but obviously they haven't heard back from them.
Anyway it was almost $700!!
And the best part, they included
$70 in there for mileage for
about 4 miles to the hospital.
Kinda makes me feel like I rented
an expensive U-Haul to go to the hospital
at that rate.
So if the insurance doesn't cover
the ambulance I'm gonna have
double that in hospital bills for myself alone,
not including Tony's stay recently
for almost 4 days.
And like I said earlier, we're being shorted
about $1200 on our tax return compared
to last year.
This will be interesting is all I gotta say.

Time to go work on more ideas
for the cupcake contest!!!

Remember me telling you the deal
I got on the battery operated Spinbrush toothbrushes.
I stocked up on about 6-8 of them.
I came up with this great idea of a
use for one of the extra ones I had.
I now use it for my face.
I use it to exfoliate the dead skin
and to cleanse my face.
Sometimes I just run it across
my face to massage (and help tighten- ha ha) my skin.
I get a lot of dry skin in the Winter
and this is helping a lot!
So I just wanted to pass on a
new use for those battery operated toothbrushes.
Sure is much cheaper than
purchasing a Nutri Sonic Face Brush
that runs $90 to $100!!

1-20-11

9:25am

Threw my leftover ham with
bone in the crockpot
with a can of Campbell's Select Harvest
Chicken Vegetable Medley.

1.5 grams fat
sugar 4 grams
protein 7 grams
cholesterol 10mg
sodium 480 mg

Later on I'll make up some
mini piccolini pasta, carrots
and cubed potatoes to throw
into the soup as well.

Barilla Mini Piccolini Ziti Pasta
1 gram fat
0 cholesterol
0 sodium
sugar 1 gram
protein 7 grams

--------------------

Went to the library today.
Got a bunch of books on
South Beach Diet, Atkins Diet
and recipe books on those as well.
Also got some more cupcake books
to get ideas for the contest.
I also found books on
energy efficiency- things
to do around your home to save money.
How to conduct your own
energy audit.

Had to stop in Kroger
and get some milk.
I found a large package of about
6-8 tilapia fish fillets
for $5.29
was almost $10.
I think fish is a excellent
food to add to any diet
whether it's canned tuna, salmon or frozen
and fresh fillets. I'm not talking
about breaded fish fillets or fish
sticks as those are bad for you.

-------------------

We have been without running water
since earlier this morning.
I think the city is working on a
water main break down the street
and shut off the water in the area.
My concern was the toilet.
Don't flush, pee is fine to a point
until it starts stinking.
If you have to do #2 then flush.
Then I will go outside
and collect snow in a metal bowl
and put it on the register to melt
to put in the toilet.
If need be I have about 20 or so
recycled Sunny D bottles filled
with water in the basement
to use for emergency water!
Always be prepared!
We don't know when this water
will be turned back on or if it
will have to be boiled for awhile
when it does.
Because of thinking ahead I won't
have to run to the store and buy water.

---------------------------------------

4:10pm

Got my ham deboned and shredded up,
carrots & potatoes diced up and boiling
and macaroni boiling.
I used about 2 cups of V8 juice
I had leftover in the fridge
and put it in the soup also.

Now after seeing the above photos,
doesn't a big bowl of veggie, pasta and ham
soup sound good, full of vitamins
to ward off those evil viruses.

I didn't get my tilapia fish made
yesterday as planned.
I discovered we had enough
leftovers from previous nights
to use for supper instead.
Didn't want anything to go to waste!

----------------------------

Tony's birthday is coming up near
the end of the month.
I usually make him a sugar free cake.
I found a .50 cent printable coupon
for any Pillsbury sugar free
brownies, frosting or cake mix.

(doubled to $1.00)
Print 2 and you could save on
a cake mix and frosting for
a diabetic's birthday.
I've never tried the sugar free frosting,
actually never knew about it.
Wonder how they make it
sugar free? Do they make
sugar free powdered sugar or what?
You have to watch when you buy
sugar free cakes, cookies, candy
to not eat too much of it at once.
The sugar free stuff they use in these
products can act like a laxative!!
And even though the frosting is
sugar free still doesn't mean it's
good for you. It has saturated and
trans fat in it since it's made with
hydrogentated oils.

--------------------------

6:00pm

I found this deal on hip2save's site.
I might see if Tony will go to Target
tomorrow to see if we can find any
marked down boys stuff.
I printed out 2 of each of the coupons
Target had for
$5.00 off $9.99 or higher Shaun White
boys apparel
and
$5.00 off Shaun White shoes.
I always check prices of things
with in store scanners.
Don't know if Target has them or not,
if not ask someone for a price check!

Anyways here's what I saw on hip2save.

Target has begun putting their boys Shaun White sneakers on clearance, bringing the price down from $27.99 a pair to between $13.98 and $7 a pair (depending on if your store has them at 50% or 75% off). If you combine the clearance price with the $5 off Shaun White Shoes coupon on the Targets site, you can score a pair of shoes for as little as $2!

Here is a pic of the shoe and price tag. The price tag on the pair I bought shows as $13.98, but at the register it rang up $7 which is 75% off, used the $5 off coupon and paid $2!! I went back a bit later with another coupon and scored another pair for $2 as well. It’s only the boy’s sizes that are on sale – sizes 7 and up are still regular price.

I have been working on
an idea for my next cupcake.

1-19-11

6:30am

Breakfast this morning.
Sausage flavored gravy .80 cents
over Grands biscuits .50 cents
with apple mango 100% Old Orchard juice. .75 cents
Total cost: $2.05
serves 4 @ .51 cents a serving

Gonna have to start making
my own biscuits after I run out of
the Grands biscuits I have.
These things have 7 grams of fat per biscuit,
3.5 grams trans fat,
1.5 saturated fat, not good!

You could use
Bisquick Heart Smart instead.
Only 2.5 grams fat
1.5 grams saturated fat and no trans fat.

OR try Gluten Free Bisquick
.5 grams fat
no saturated or trans fat
It's made with rice flour.
HERE are other recipes
you can make with the gluten free bisquick.

I'll use up what I have but will
try to start buying healthier foods
when replacing those items.

Lunch
Leftover pot roast, potatoes, carrots & gravy

Supper

Teriyaki marinated Tilapia fillets
(free)
Will wrap vegetables, marinade
and fish fillets in foil
and place in crock pot
with a little water.
Keep them off bottom of crock
by using crushed aluminum cans
in bottom. Sit foil packets on top
of cans.

La Choy Teriyaki Marinade
1 tablespoon 10 calories
0 fat, 0 cholesterol
(.25 cents)

Green Giant Teriyaki Vegetables
(broccoli, cauliflower & carrots)
45 calories per 1 1/4 cup serving
0 fat
(.40 cents a box x's 2 is .80 cents)

Fettucini Alfredo Pasta (.33 cents)

Total Cost: $1.38
serves 4 @ .34 cents a serving

I was curious and did a search
about how many grams were
in a pound.
The answer rounded was 453.
Now think about how many
pounds of fat you're eating a week
when all those grams start to add up!!

-------------------------

New site for even more printable coupons!
Values For Health
Print more $6.00 off 2 coupons
on Zyrtec, Pepcid, Motrin or Precise!!
I now have 4 of these to use, woo hoo!

---------------------------

I thought this was a neat idea,
using wood pallets to make a shed
or an out building.

You could actually make a cabin
or a kids playhouse out of free materials
like pallets.
This above is only one example of
what others have done.

-------------------------

1:40pm

Went to the thrift store and got
the boys each 4 pairs of pants
for a total of 8 pairs.
I paid $8.92 for all of them.
7 pairs was .99 cents each
1 pair was $1.99
Tonight I get to have them try them
all on and start hemming them up.

I also found Jonathan a nice
Winter jacket for $3.99.
Sure beats $30-$40 new!
.
Then as we were walking to the checkout
we saw a huge remote behind
the counter still in it's package.
I told Tony I would buy him an early
birthday present, it would actually be for everyone.
The reason I got this was because I am
soooooooooo tired of looking for
the remote!!
This thing is the size of a notebook computer
so the chances of it getting lost
are slim to none.
paid $4.99.
Cost new $15.

We stopped in Micro Center just
to browse around.
Got some batteries for the remote
for .59 cents a 2 pack!
Also found a Nintendo DS
"game" that's called
My Stop Smoking Coach
for $1.99
It originally was around $12.
Gonna play it in our $7.00
Nintendo DS (that included a
2 games and guitar hero keys,
and charger from a yard sale!)

When we were getting in the truck
in Microcenter's parking lot there
was this older lady walking around
asking for change. We gave her a dollar
and got to talking with her.
She was out of work not knowing
how to make it day to day.
She was really nice to talk to
and was genuine unlike others
who ask for money for gas for their cars
that broke down blocks away or need
money for the bus only to go
buy some beer with it.
She was saying that Microcenter
is about ready to call the police on her
because of her asking for money
in the parking lot.
I said hey, I'd let them do it.
Take me to jail where I can
have a warm roof over my head
and food in my belly if got to that point.
First off let me say Microcenter
is located on Olentangy in an area
full of yuppies.
I told her we weren't from that area
that we come over here to yuppyville
to buy the mark downs that the yuppies
don't want. She says said she asked a
lady in a Mercedes for some change
and she turned around and called her
a bitch. That's uncalled for
when yuppies can't give the time
of day to even spare a quarter to
someone in need!!
I said well I have to go now,
need to head back to the hood.
She said she lived by the Mexican market
on Morse Rd. I said oh, that's where
we lived also.
Why is it, it takes one to know one
to understand and the rich can't
understand that they too can be
where we're at one day in
the blink of an eye!
Some people in this world are
so heartless and unsympathetic
towards other people no matter
what race or background they may have!

I checked out the Virtual Library.
It appears that you can download
ebooks, audio books, eflicks and music.
Some of which can be uploaded to
mp3 players, ipods, electronic books and so on.
Some things you can even burn to cd's
if permission is allowed.
You will need to have a library account/card
to be able to download these items.
You don't have to worry about returning
items borrowed as they automatically expire
and are removed from your account
or you can click on them to return them early.
I don't know how many you can
check out at one time.
You have to put a hold on the items
and they send you an email when they
are available to look at.
You do have to download Adobe Digital Editions
to be able to view items you check out.

I currently have some items on hold
and are waiting for an email.
Will let you know how it turns out.

-----------------------------------

.
Captain D's two-piece fish.
Sign up for Captain D's Club
and receive a printable coupon
in your email for a FREE
2 pc fish & fries OR
chicken & fries.
Includes one regular side and
2 hush puppies!!

You won't be able to print
more than one of each coupon and use on
2 different people so you need
to sign up twice with 2 different emails
and names. Your name will be on the coupon
and Captain D's may ask for your ID
to verify who you are.
We did this once before and I'm
pretty sure they asked for our ID.

This is where me and Tony
are going today for 2 free lunches!!
Drinks are not free and will
have to be purchased at regular price.
Or do like me and Tony do,

12:40pm

Lunch was good!
We couldn't eat it all.
Came home with 2 pieces of fish,
and 2 hush puppies.
They didn't ask for an ID
but we did have to put our
signatures on the coupons.

Had to stop in Kroger to get some
trash bags and a couple cans
of broth for my pot roast.

I think our new year's resolution
will be to try to eat better and read
more labels before purchasing food
at the grocery store.
So as I find healthier items
when comparing certain products
I can post them here.
Healthier items can cost more
than your regular items.
Today I got 2 cans of beef broth
and compared all the labels.
Kroger brand was .89 cents for regular beef broth
but I opted for the Swanson brand for $1.39.
Swanson beef broth was 100% fat free
and had 50% less sodium.
And never rely on what the front
of a product says like less fat or lower sugar,
I still compare the nutrition labels.

Calorie Count

is a good place to be able to
review food labels before heading
to the store.

1:20pm

I just redeemed some points
from surveys for a free $25
GameStop gift card.
I will collect these throughout the
year to use them at Christmas time!
So in 11-12 months I should have
$100 in free gift cards to use!
So far I've gotten two $25 Gamestop
cards from them (not including this one
I just sent for today)
along with magazine
subscriptions to Martha Stewart
and PC.

------------------------------

I forgot to mention the other
day we found a large decorator tin
of gourmet popcorn at Kroger,
butter, caramel, and cheese flavored.
Was $6 marked down to $1.50.

-----------------------------

Supper
I noted anything that I used
to make supper more healthier.
It's a start :0)

Pot Roast $3.11
(used pot roast from combo pack,
I put the steak and beef cubes back
to use both for a beef stew another day)

Potatoes .33 cents
(1/3rd of a 5 pound bag)

Carrots .50 cents
(1/2 of a bag)
Sprinkled with about
a teaspoon of brown sugar
& a tablespoon butter, see below
for butter used.

1/2 an onion
(leftover from another meal)

2 cans beef broth
$1.39 x's 2 is $2.78

gravy-
beef broth
(fat free, 50% less sodium)
water, flour

Morton's Lite Salt
(1/2 sodium of regular salt)

Mrs Dash
(salt free seasoning)

I Can't Believe It's Not Butter
made with Olive Oil
(50% less fat & calories than butter,
no trans fat or hydrogenated oils)

Total cost for meal: $6.72
serves 4 for supper
serves 2 for lunch tomorrow
$1.12 per serving

The greatest part about supper...
I got two kids to actually eat cooked
carrots and ask for seconds!!
I don't think I've ever seen Christopher
eat carrots like that, other than
cut up real tiny in soups!!
It's progress, woo hoo!
I'm trying really hard to get them
to eat more fruits and vegetables
and told them we need to change the way
we eat. It would give us more energy,
a better mind/memory,
better sleep, lose weight, healthier bodies,
healthier skin & hair.

Here's a tip.
to reduce mashed potatoes in your diet
try mashing up some cauliflower instead.
I might try this to see if the kids
will eat it.
Use natural seasoning for flavoring foods.
Honey is a good to use to
sweeten foods rather than sugar.

7:15pm

Tony's boss just called and told him
to go ahead and take the whole week
off and return to work next Monday.
He was originally going to go
back to work Friday.

-------------------------

I was browsing Facebook and saw
on there where someone posted
that after only 5 years of paying
on their house they had
only $1116 towards the principal.
The principal is the payoff amount on
your home. Typically if you make
regular payments, no added money,
it could take 15 years or more on a 30 year loan
before you would see any significant amount applied to
your principal. So 15 + years of pretty
much paying interest.

So I had to get out my house payment
for next month and check to see
what our payoff amount was
and how much principal has
been applied to the house
in 2 1/2 years of making extra principal payments.
Good news, so far I have applied
$6,330 towards the principal
in just 2.5 years!!
I try to make about 3 extra
house payment a year towards
the principal.
At first I was going to make 2 house
payments in one lump sum at tax time.
And break the other house payment
up between 12 months.
But after doing some research
I realized it was better if I divided those
2 extra payments throughout 12
months time as well.

I guess it would all depend upon
your interest rate as well, as to how
fast you can get your loan paid off.
I think we got a pretty good rate.
So, whatever you can apply to the
principal each month is good
to get that house paid off sooner!

I really would like to quit smoking.
But I don't think anti-depressants
are gonna work for me to quit.
I'm thinking about trying those
nicotine patches in the near future.
I have it in the back of my mind
that if I am able to quit I would
like to apply the money I would have spent
on cigarettes towards the house principal
to get the loan paid off even quicker
than 15-16 years down to
under 10 years.
But it's easier said than done
when it comes to an addiction like nicotine.

---------------------

Tomorrow I might visit the
thrift store. I think Jonathan went
through a little growth spurt recently
since some of his pants look like
high waters. He could also use
another Winter jacket since
his is looking too small on him.

----------------------------

10:45pm

I was watching Cupcake Wars
on the Food channel, lol.
Trying to see if I could
get ideas for the cupcake contest.

I think we've decided we're gonna
sell 2 of our cars in the near future.
So anyone in the market
for a 74 Charger or a
79 Trans Am let me know.
We're gonna need the money
in the bank account more
than we need the vehicles.
Plus it would make our
insurance cheaper.
Might have a buyer for the
Trans Am. An in-law called today
and was asking about it.
So we'll see. It's the second time
they've asked since this past Summer.
I don't get hopes up until I see the cash.
You know how that goes.

American Idol returns tomorrow
at 8pm on channel 28 for 2 hours.
Will have to record my
Ghost Hunters and watch
it Thursday.

This next tip may sound a little crazy but
it works! Saved me a bunch
of money on first aid supplies
and a trip to the store.
I have a bunch of packages of
panty liners I got free with coupons.
I really don't use them for
personal feminine use.
They look like the size a baby
doll could wear!
Instead of buying large bandages
or gauze these can be used over
cuts under clothing.
Not something worn where
everyone else can see it!
Works perfect
and is sterile just like a bandage!

10:00am

See I told you I wasn't in my right mind.
Kept saying I didn't have any freezer meals.
I was looking in my big freezer for any
freezer meals and not seeing any when
last night I discovered I had kept them in
the refrigerator freezer upstairs, duh.
I still have potato soup, bean soup
and chicken al la king in the freezer.
I had me a big ole bowl of potato
soup before bed, yummy!
That made me sleep well through the night.
And now I have 10 pounds of potatoes
and a ham to make more meals out of.
So we should be set for a little while.
I should make up a bunch of ham,
egg and biscuit sandwiches for breakfast
freezer meals for the kids in the mornings.
I can get 4 days worth from one
can of biscuits for 2 kids (8 count Grands).

The doctor came in this morning
around 6:30 to check Tony's infection
in his knee/leg. He said it looked
better than yesterday. He took the wrap
off and left it off.
Nothing was said at that time about
being released from the hospital
so we are waiting to see what they do.

1:45pm

Doctor came in again to check on Tony.
He said he could be released from
the hospital today, woo hoo!
He will have to stay off work for
another 3-4 days from what the doctor said.
Not sure when they will release him
since I'm sure it will take awhile
to get all the paper work done up.

3:00pm

Left for the hospital.

6:00pm

Just arrived home.
Picked Tony up from the hospital.
He's walking so much better!!
Went over to Kroger in UA
to get a couple prescriptions for him.
Before now Tony couldn't even walk
around a store and if he did it
was at a snail's pace, literally.
Today it felt so good seeing him
walk a little bit of a normal pace
without cringing in so much pain.

While waiting for prescriptions
I found these deals:

A football shaped deli tray
with pepperoni, cheese cubes
and crackers for $3.99.
Was something like $12 before mark down.

Kung Zhu Battle Hamster $3.50
Kung Zhu Battle Hamser Special Forces Amor $3.00
reg. $10

2 Pumpkin Bread Kits
each make 2 loaves
includes cans of pumpkin,
bread mix and vanilla icing for $1.50 each.
Regular $6
And lastly a 3.5 pound combo package with
steak, pot roast and stew meat.
I paid $6.22
was $12.15 on sale
(was $19.11 before sale)
I'm making some pot roast tomorrow
in the crock with some potatoes and carrots!
Pot roast around here is a treat for sure!!

Interesting news from channel 28.
Tony says before leaving work Monday
he remembered seeing the eviction
notice taped to this football player's
apartment.
Now this player has made the news
because he had enough money
to get tattoos and not pay his rent.
This football player lived
where Tony works.
This news story is on tonight
at 10pm on channel 28.
Or you can view the video HERE.

Today I was asked about libraries.
If you are disabled and love to
read books how does one get to the library
to pick up those books.

Well I wanted to share with you something
that I just discovered and are learning about.
Tonight I went to the library's website to
look up a few books. I noticed a link
that said digital download.
Of course I clicked on it as I had
never seen that before.
I am currently looking at the tutorials
about how to download at the virtual library.
You can go HERE to look through
this new option I found for the library.
Click on this guy to go to the list of
tutorials to see how to do it.

Digital Media Guided Tour

I hope this is helpful to those who
may not have transportation to go
to their public library or may have
a disability preventing them from going.
It's a start.
Just letting you know it's something I
just happened upon and know nothing
about it til I read and learn what
it's about.

This is for the Columbus Public Library.
If you are outside Columbus, you may
want to look your library up online
to see if they have a virtual library.
It is only for people with computers though.

10:25am

So tired. Just got up before 10.
I tossed and turned all night
and the last time I checked the clock it
was 2am.

The schedule around here is so outta
wack. I did figure out our new dishwasher
yesterday and got most dishes done other
than the large pans. The kids don't have school
tomorrow due to Martin Luther Kind day.
So between today and tomorrow I have
laundry to do sometime. Been eating crappy with
stuff like McDonalds, ramen noodles, grilled cheese
and chicken sandwiches from Kroger's deli.
I think today I'll pull something from
the freezer and throw it in the crock pot
and let it cook with all the running back
and forth to the hospital.
Or maybe I'll see if I have any more
freezer meals left.
That would be nice but I don't think
I have any more.

I've been keeping a notebook with any
and all jelly bean cupcake ideas.
I am now at a point of determination
with getting things entered into this contest.
I really need to win this due to all
doctor bills we're gonna have!
Mine wouldn't have been too too bad
but now with Tony's we might be
struggling. I know you can make
payment plans but I'm sure that
would take many years to pay off.
I hate the idea of having bills hovering
over our head that aren't paid off.
Heck I hate the idea of a house payment
and are trying to get that paid off way early as well.
I know I could use the tax refund but that's
money we live off of for they next year.
Let's hope the insurance pays most!
We pay about $5000 a year for insurance!
I'm sure being the beginning of the year
there will be a deductible we will
have to meet first.

So, if you hear me talk about cupcakes
in the middle of everything going on,
it's not because I have my priorities in the wrong place.
It's because I am thinking
ahead with the bills we're going to have.
It's sad some people can do these contests for fun
while others do them out of desperation!

I just got the gas bill the other day
and it jumped up $28 from last month.
They guesstimate it though.
I've been turning it back 3 degrees
more than what I had it set at last year.
Last year I ended up paying too much
and had three months of not having
to pay a gas bill so that was good.
So we'll see how it goes this year.
I can't wait for Spring weather!!

We're wanting to change our diet
with more healthier foods.
Don't know how to do it the cheap way.
Gotta cut back on buying convenience and
boxed foods at the store. Cut back on pastas
and starchy foods as well.

Sorry my mind is going in 100
different directions at the moment.

---------------------------------

12:20pm

Got laundry started,
dishes put away,
and loaded my pans into dishwasher.
Man this dishwasher is great!
I got 4 skillets, 1 saucepan and
a large pot along with a few other
dishes/cups into the bottom rack alone!

Also got a ham out of the freezer
and put it in the crock pot.
I just threw stuff in there, no recipe.
Poured a lil V8 Splash raspberry juice
into the bottom then rubbed the ham
with grape jelly, zested a couple orange
peels on top, sprinkled with brown sugar
and season salt.

Figured I could get a few meals out of one ham.
I could also take Tony some ham sandwiches
to the hospital.
It's a frozen precooked ham on low in the crock
so it can slowly warm up throughout the day.
I've never done a ham in the crock.
------------------------------

1:15pm

Got 2 loads of laundry in the washer/dryer,
one load out,
creamed chipped beef made for
lunch & kitchen tidied up.

I think I'd like to head up to the hospital
around 3pm.
Can only get up there once today since
mom is busy with other stuff
and she is the one taking me.

------------------------------

1:40pm

Just talked to Tony online and this is
what he said the doctor did today:

yes he put the needle in my knee
then cut a one inch slice in my knee
then put a wick in
my knee to drain
.

it hurt like helllllll

its hurting like ------ right now

any pain meds?

not doing much good right now

did they have to stitch it up

no

I think I'm gonna wrap things up here
and have mom take us up to the hospital now.

On a brighter note they said he
may get to come home tomorrow!
Let's hope!!!!

--------------------------------------

4:10pm

Just returned from the hospital.
Tony's leg/knee was wrapped up
in gauze. He was so kind to unwrap
it for us and show us everything the doctor did earlier.
Now I have that visual stuck in my head!
It was cut pretty deep and you could see
layers of skin, ewww. Nothing is holding
the cut together at the moment.
They do have something else stuck
in the cut that they call a wick.
This wick I assume is to help draw out
more infection.
Tony said the doctor stuck in a needle to
withdraw some infection and got about
1/3rd of a needle container full.
By having them decide to open
up and drain the knee we are hoping that
the infection can now start to clear up.
But who knows, it could open up
a can of worms.
Think about it, cellulitis is caused
when bacteria enters any scrape
or cut on the skin whether you can see
it with the eye or not.
So let's hope the antiobiotics are
doing their job!

He was still in lots of pain and
the nurse gave him some vicadins for it.

He also had to do this thing you blew air
into. They said it was to keep you from
getting a fever. Never heard of that before
so it must be something new.
It looked like a breathing
treatment thing you blew into see how
much air you were breathing or
exhaling.

Hoping all this cutting and draining
shows signs of getting his knee/leg better
so he can come home tomorrow!
It still could be awhile before
he returns to work.

---------------------------------

I found this story someone wrote
that I thought y'all might like to read.
It's called
Rich Food, Poor Food
Why are there no recipes for
what to cook when you have nothing at all?

----------------------------

For lunch we had creamed chipped
beef over biscuits, supper was
ham sandwiches.
I'll take some of those leftovers
and tomorrow make ham and eggs
on biscuit sandwiches.

I probably won't make another big
shopping trip for awhile and will
have to use things I have on hand.
So I'm sitting here trying to think up meals
for the next week or so and stretch
everything as far as it will go.
Just putting thoughts down because
at the moment I'm liable to forget
many things.

I have 10 pounds of potatoes that I will boil up.

Fried taters and Italian sausage.

Mashed potatoes with pork chops
and stuffing.

Beans and weenies.

Ham & potato soup
with carrots & celery.

Chicken piccolini noodle soup
with leftover carrots and veggies,
cream of chicken soup.
