6:15am

Rise and shine a little earlier this morning.
My honey had to go into work early
to plow and salt the roads/parking lot.
Made the kids some chocolate chip muffins
with cream cheese frosting drizzle this morning.

Was browsing a few recipes for ham.
Last year I did the orange marmalade glaze
and wanted something different this year.
Here's a few recipes I am considering.
You can use a baking bag to put the ham
in have a moister ham.

Sweetened Baked Ham

You could also add a little honey
mustard drizzled on top of the brown sugar.

Ingredients

  • 1 (12 pound) bone-in ham, rump portion
  • 1/2 cup whole cloves
  • 1 cup packed brown sugar
  • 4 cups water, or as needed

Directions

  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. Place ham in a roasting pan, and press whole cloves into the top at 1 to 2 inch intervals. Pack the top with a layer of brown sugar. Pour enough water into the bottom of the roasting pan to come to a 1 inch depth. Cover the pan tightly with aluminum foil or a lid.
  3. Bake for 4 1/2 to 5 hours in the preheated oven (about 22 minutes per pound), or until the internal temperature of the ham has reached 160 degrees F (72 degrees C). Make sure the meat thermometer is not touching the bone. Let stand for about 20 minutes before carving.

Glazed Ham

Ingredients

  • 1 (8 pound) bone-in shank ham
  • 4 cups water, or as needed
  • 1/2 cup honey
  • 1/2 cup brown sugar
  • 2 tablespoons liquid smoke flavoring
  • 2 tablespoons Worcestershire sauce
  • 1 pinch ground cloves

Directions

  1. Preheat the oven to 275 degrees F (135 degrees C). Place ham in a roasting pan. Pour in water to a 2 inch depth. Cover with a tight fitting lid.
  2. Bake for 6 to 8 hours in the preheated oven (all day or all night). Remove from the oven, pour off drippings and reserve. Debone ham, removing any excess fat as well, and return to the roasting pan.
  3. Skim fat from the top of the drippings, and discard. In a small bowl, mix one cup of the drippings with honey, brown sugar, liquid smoke, Worcestershire sauce and cloves. Pour this over the ham, cover and return to the oven. Remaining drippings may be discarded or reserved for other uses.
  4. Bake for another 30 to 40 minutes in the preheated oven. Let stand for 10 minutes before serving.
More tips for making a ham:
Combine a can of lime soda with brown
sugar and use to glaze ham.
Add pineapple rings and cherries to ham with toothpicks.
You could also score top of ham and insert
whole cloves.
I don't have whole cloves, nor can I afford them, so
maybe I can add some allspice seasoning to the glaze mix.
No room in oven for a ham?
Try to cook it in a crock pot using the recipes above.
Add a little water in the bottom with liquid smoke.
Watch your time though as it could only take
about 2 hours at the least to warm through
unlike the oven method. Cook too long
and you ham could fall apart. I guess that all
would depend upon if you wanted to be able
to slice it or not.
I think if you wanted to use the crock pot to try
and use one of those boneless hams that
are rectangular in shape. Buy the ones that are not
sliced (might be cheaper) and ask the butcher
if he could slice it for free. I did this last year.
You will have to tell him how thick you would
like it sliced.

Here is a cookie recipe I want to make today.

Chocolate Mallow Clusters from Kraft

Chocolate-Mallow Clusters recipe.

What You Need

1 pkg. (8 squares) BAKER'S Semi-Sweet Chocolate
1 cup JET-PUFFED Miniature Marshmallows
1/2 cup crisp rice cereal
1/2 cup PLANTERS COCKTAIL Peanuts
1/2 cup coarsely crushed pretzels
1/2 cup dried cranberries
20 JET-PUFFED HOLIDAY MALLOWS Marshmallows

Make It

MICROWAVE chocolate in large microwaveable bowl on HIGH 2 min.; stir. Microwave 1 to 2 min. or until chocolate is completely melted and mixture is well blended, stirring every 30 sec. Add next 5 ingredients; mix well.

SPOON into 20 mounds on waxed paper-covered baking sheet, using about 2 Tbsp. cereal mixture for each. Top each with 1 large marshmallow, pressing marshmallow gently into top of mound to secure.

REFRIGERATE 30 min. or until firm.

Kraft Kitchens Tips

Size-Wise
A serving of this sweet treat goes a long way on chocolate flavor.
Variation
Substitute 1-1/2 cups of your favorite trail mix for the nuts, pretzels and cranberries.
How to Store
Store in tightly covered container at room temperature.

I think I'm going to omit the last three ingredients
and just use chocolate, rice krispies, peanuts
and maybe marshmallows to make it.
Don't know why you couldn't make this into
S'Mores clusters and add some
chopped up graham crackers to chocolate
and marshmallows!
Or here's a thought,
use Golden Grahams cereal.
(I think malt o meal has their version also)

S'more Drops Recipe

Ingredients

  • 4 cups Golden Grahams
  • 1-1/2 cups miniature marshmallows
  • 1 cup (6 ounces) semisweet chocolate chips
  • 1/3 cup light corn syrup
  • 1 tablespoon butter
  • 1/2 teaspoon Spice Island® Pure Vanilla Extract

Directions

  • In a large bowl, combine the cereal and marshmallows; set aside. Place the chocolate chips, corn syrup and butter in a 1-qt. microwave-safe dish.
  • Microwave, uncovered, on high for 1-2 minutes or until smooth, stirring every 30 seconds. Stir in vanilla. Pour over cereal mixture and mix well. Drop by tablespoonfuls onto waxed paper-lined baking sheets. Cool. Yield: 2-1/2 dozen.

My honey called to say he's bringing me home
some goodies.
He found a large area rug, he thinks it's
about 9x12', an antique table and a box
of dishwasher detergent. Freebies are good
when you have a limited income!

an almost 23 pound turkey that cost
almost $30!! I'm putting it in the freezer
so I'll have it come next Thanksgiving.
Yes they do last that long in the freezer
and have been doing it for several years now.

My honey just got home from work!
Then had to go back out due to another page.
Ahhh! Oh well gotta think extra money!

Got about 3 1/2 dozen snickerdoodles made.
To stretch my cookie mixes I've been adding
a 1/2 cup flour to each batch.
For the snickerdoodles I added about
1/4 cup dry gingerbread coffe-mate creamer
to the dough.
Then I added about a tablespoon to the
cinnamon-sugar mixture I rolled the cookies in.

I got the teacher's bags done up and
ready to be taken to school tomorrow.
I put the hot chocolate mugs into the
bottoms of the bags and then filled
the bag with cookies.
And I made a couple batches of
chocolate toffee graham treats.
I threw in some peanuts also to give
it a little somethin' somethin'.
Recipe is found on 11-30-10.
Here I just removed them from the
oven and sprinkled with chocolate chips.
Then once the chips melted you take
a rubber spatula and spread the chocolate over top.
Supposed to put in fridge so that the
chocolate & toffee can harden. But I don't have any
fridge space so might sit outside instead, LOL.
Hey, whatever works!
Let's hope the neighborhood raccoon or cats
don't come for a visit when my back's turned!

watch some tv til my honey returns home.
Maybe fire up the electric blanket and

Breakfast 7:30am

Since it was very cold out I wanted to give
the kids something other than cold cereal
for breakfast this morning.
I made apple cinnamon muffins
and topped them with cocoa krispies before baking.
Then once baked, melted some cream cheese
frosting and drizzled over the top.
Yummy!
Total cost for 4 large muffins:

muffin mix .39 cents
and the other ingredients was leftovers
I had sitting around.

10:00am

Got cookies baking in the oven.
I used a Krusteaz chocolate chip cookie mix
and added about a cup of dried cranberries that has
been soaking in water overnight with a little
almond & vanilla extract.
I stirred in a tablespoon of orange zest to cranberries
before adding to mix.
Then I stirred in a half cup of flour.

I wanted to add in some walnuts
but I'll be darned if I could find them in the pantry.
So instead I put in a half cup of granola cereal.
I had some extra cream cheese frosting so I put some
in a zip bag, closed, then rolled it around in my hands
to warm it up and make creamier.
I snipped a very tiny piece of one
of the corners of the zip bag. Then piped it
over top the cookies.

Homemade Potpourri

I had some orange and lime peel leftover
from baking so I threw them in a saucepan
with a cinnamon stick, nutmeg, ginger, ground cinnamon & allspice and covered with water and have it simmering on the
stove.

Around 10am this morning the township
was out and about plowing the streets.
I feel for the people who literally live one block
from here who don't get their streets plowed
because it's city streets.

It's taken me 2 days to search through numerous

pictures online to find some pictures to print

out for my gift bags.

I had to doodle and crop each image to fit the

size of the bag.

I printed them, cut them out and glued

onto paper lunch bags.

In the middle is the name tag.

I folded the top over and glued the one design

on the flap then poked 2 holes in the flap with

a pen and inserted some ribbon through it.

4 spools of gold ribbon .90 cent thrift store find.

Of those 18, I did 15 of those up for only 1 person,

and 3 of them which are for families of 3-4 people.

I am starting to get stressed out just a little!

I'm going grocery shopping tomorrow

to get stuff for Christmas dinner.

Then to Walgreens to use my $5.00 Jingle Cash

and possibly Walmart to return some Spinbrush

toothbrushes.

Kendra is stopping by to give me a FREE turkey!

That is sooooo nice of her to do that for us!

I couldn't afford a turkey this year to put back

for next so this is much appreciated!

Then I have Christmas wrapping to

do this week also along with Christmas cards.

My friend Kendra said she liked the idea with

the cranberry sugar cookies and made her own.

Instead of Canberries she added strawberries.

Said she will bring me some strawberries

and sugar cookie mixes over tomorrow so I can try

to make some. I think I will and add some

white chocolate chips to them and roll them

in red sugar sprinkles before baking.


Here's my assembly line.

I still have 9 more gift bags to make

and another hot chocolate gift mug.


And let me add in here that Tony is

on call all this week also.

Gone crazy, be back later, lol!!

Jonathan put together a skateboard and

wanted to give it to his lesser fortunate friend

for Christmas who didn't have one.

He's been asking me for paint

the last couple of days so tonight I got out

some and decided to paint it up for him.

I wasn't too crazy to hand him a paint brush

and a gallon of paint and let him do it himself!

Whew, so glad that's over with!


I figured up that it costs me .09 cents a bag

to make. So for 18 bags was $1.66.

Yeah it's allot of work to try to save some

money. But I think in this case it let people

know that you put more thought into their gift.

Now time to work on my grocery list

then I'm heading to bed!

I got cookies zip bagged up this morning.
Still have many more to make.

I was working more on my printer this morning.
I got it to print better but there was quite
a battle with it. It put up a good fight and I
think it won. I removed the black ink cartridge
and it leaked everywhere on me, not on anything else!
I've got it all over both hands, a toe from where it dripped
and hit my sock and my right thigh from where it
dripped on my pants and went through to my skin.
Ruined my pants, grrr.
Now I'm stuck for awhile with black ink all over
me because it doesn't exactly wash off!!
So if anyone asks I'll tell them I have
frost bite on my fingers to freak them out, LOL!

Found some gingerbread coffee-mate powdered

The boys went to a birthday party.

the kids didn't go without a present.

Got all my laundry done.
I'm running a little behind with that.

Just got done making 26 Empanadas
with Nutella & nut filling dusted with powdered sugar.
I used a Krusteaz sugar cookie mix to make these.
I added an additional 1/2-3/4 cup flour
to the mix to make a stiffer dough.

I made up 5 Christmas coffee mugs for gifts.
I just recently got all the mugs for free so that was a plus.
I put a packet of hot chocolate, a baggie of mini marshmallows
and a plastic spoon dipped in chocolate and covered in
sprinkles, in the mug. I'm also thinking about doing
a baggie of crushed up peppermints to add in there also.
These will go to 3 teachers, Tony's maintenance boss,
Tony's friend at work & mom/step-dad.

Tomorrow I plan to bake up some
cranberry chocolate chip cookies.
I cut up some dried cranberries.
Tonight I have them soaking in a bowl
with a little vanilla & almond extract to
plump them up.

Got a good deal at Meijers today.
They have a one day sale going on today.

The cashier let me use four $3.00 off coupons ($12.00)

$3.58 or .89 cents each!!

I saved $27.58 by shopping the sale
and using coupons.

This week at Walgreens I was able to
get a $5.00 off anything Jingle cash catalina coupon,
good only next week.
I was just looking through a sneak peek ad
for Walgreens for next week.

I was trying to figure out the best way to spend
that free $5.00 and here is what I came up with.

They have certain toys that are priced at
$6.99 each for buy 1 get 1 free.
I can use my coupon and
get $13.98 worth of two toys for $1.99!!

Finished around 3 1/2 dozen
ginger lime spritz cookies.
I used a sugar cookie Krusteaz cookie mix, an egg
added a 1/2 cup plus 4 tablespoons flour
to the mix. Added 1/2 teaspoon almond extract
along with the juice of 1/2 a lime.
I then put in the fridge for an hour or so
before putting it in the cookie press.
I made the icing with powdered sugar,
corn syrup & whipping cream then added about
a teaspoon of dry lime jello.
Then used a small brush to put the icing on.
Placed a red hot cinnamon in the middle.

Got another dozen strawberry cookies made.
I wasn't liking the way they were looking
so put the other half of the dough back for
something else tomorrow.
I really need a foam snowflake stamp
to make my stamped cookies.
I press the stamp into the cookie
then fill in the indentation with icing
or melted chocolate.

Was supposed to of had supper started by now
but around 5:30 the kids had come in from playing football.
We've had a TON of kids in our yard today playing.
I don't know what it is about our house
that they all like to congregate here.
Anyway they bring in one of their friends and show
me this kids coat which has a BIG tear in it.
It was like from the cuff up past the arm pit!!
Jonathan's telling this kid, "my mom knows how
to sew, she can fix it." Then says, "can you do it really quick
because my friend has to go home." I'm thinking,
really quick and it looks like the rip is about
18 inches long, HA HA! So carpal tunnel and all,
within 10 minutes I had this rip sewn up as
fast as I could go.
I didn't want this kid to get in trouble for
getting his jacket ripped while playing football.
So I did my good deed for the day :0)

Afterwards I hurried to get supper in the oven.

WHAT'S FOR SUPPER?

Meatloaf

Took some hamburger, added an egg, breadcrumbs
and about a half jar of chunky salsa.
I took some reserved salsa and spread over top
the top of the meatloaf then added 3 slices of bacon.
Will serve with mashed potatoes & corn.

I get done making my meatloaf and popping it
in the oven. I notice the overhead light in the kitchen
started flickering. Then as I walk out of the kitchen
I went to flip the light off and even though
the switch was in the off position is still remained
on for a couple seconds then flickered and went out.
Time to call maintenance, LOL.
That would be my husband who is a maintenance man
for an apartment complex, so he's got the know how,
well at least most the time, lol.

Anyway he hears some arching
and sparking going on inside the switch plate.
Great! Now he's on his way to the hardware
store to get some new switches. Hope that works!
We flipped the switch on the breaker for that switch.
No power to lights in kitchen or power in dining
room or one of the kids bedrooms which means
the internet modem is not working at the moment.
Lucky for me the stove is on a different breaker
so that I can bake my meatloaf!

So in the meantime while waiting on supper
and for my honey to work on the light switch I decided
to refill my ink cartridges. Printer hasn't been printing
too well. And of course in the process of doing this,
I thought I would see how many colors ink I could
put on my fingers that won't wash off, lol.
I really need to start wearing some rubber gloves
when doing this!

Kids are watching Polar Express. Anything with
a train in it and Christopher is parked in front
of the tv.

Just now eating supper.
The light switches have both been replaced
and seem to be working with no flickering
or sparks!

WHAT'S BAKING TOMORROW?

While searching through my baking stash
I found 1/2 a package of dried berries, actually
after reading the ingredients it says it's dried cranberries
in assortment of flavors like strawberry, blueberry,
raspberry, orange, cranberry & cherry.

I chopped them up into smaller pieces to get ready
for tomorrow.
I will put these in the Chocolate Chip Krusteaz cookie mix.
Berry Chocolate Chip Cookies.

As for the rest of the strawberry cookie dough
I had remaining (made cookie dough from a strawberry
cake mix), I thought about shredding up some white chocolate
(don't have any white chocolate chips)
and adding them to the dough and calling them
Strawberries & Cream cookies.
Maybe give them some icing over top to add
to the creaminess.

8:30pm

Now one of the light switches in the hallway
is making our hall light flicker.
Time to replace that switch also.
Isn't it weird that more than one switch in the
house would start going bad at the same time?
That'll make 3 switches replaced in a matter
of a couple days!

11:00pm

I decided to go ahead and make the rest
of the strawberry cookie dough.
Should call them Strawberries & Cream Crinkle Cookies
because that's how they turned out once baked.

I took a block of white chocolate bark
and grated it up real fine.
Then I mixed in the chilled cookie dough.
I scooped 1/2 tablespoonfuls, then rolled
them into balls and baked 10 minutes.

I made an icing with powdered sugar and
heavy whipping cream and brushed the
crinkled tops of the cookies
and got down into the nooks and crannies
with the icing.
