My entry I submitted is below.
I just winged it. Never had rice pudding in my life.
So I found many recipes and combined them all
to something that sounded good, LOL.
So this recipe has never been made or tried
and I entered it anyway, LMAO!!
PEACH RICE PUDDING
2 cups Weight Watchers non fat vanilla yogurt
2 cups cooked white or brown rice
3 cups milk
2/3 cup sugar
1/4 teaspoon salt
1/2 cup raisins
1 teaspoon vanilla extract
1- 16 ounce can sliced cling peaches in light syrup
1/2 teaspoon cinnamon
1/8 teaspoon nutmeg
Combine cooked rice, milk, sugar and salt in a medium saucepan. Bring to a boil, then lower the heat to a simmer and stir in the vanilla, raisins, cinnamon and nutmeg. Cook until just about all of the milk is absorbed (approx 45 minutes, depending on how absorbent your rice is) and pudding is thick.
Drain peaches. Reserve a few peach slices for garnish; coarsely chop remaining peaches and stir in to rice mixture.
Transfer pudding to a large bowl, cover and cool to room temperature. Fold in yogurt, then divide into individual dishes. Chill for at least 1 hour (or overnight) before serving.
Serve as-is, or with additional peach slices on top.
Makes 6 servings.

Ok y'all I finally got an email back concerning
the use of coupons on manager specials.
I have run ins sometimes where a Kroger cashier
tells me I cannot use manufacture coupons
on any manager specials. Now that I have this
email I will print it out and carry it in my
coupon binder. Any more problems out of
cashiers and I'll put out my letter from corporate!!

Nancy's Restaurant is coming back! Yeahhh!
Nancy is reopening this Friday according to the Dispatch.
Here is the article from the Dispatch today.
They are also located on Facebook.
I'm so glad to see it reopening once again.
They struggled through so much. Once with a fire, then
with the owner getting ill and now it looks like
another family member along with others have joined
in to get the place going again.
Nancy's brings back memories. About once a month
at work we'd go down and bring back everyone's lunch.
HUGE portions of down home meals like chicken and noodles.
I've told my mom about this place over the years and now
I'll get the chance to take her there to check it out.
