Think I will work on making
half dollar pancakes this morning
for freezer breakfasts.

While most of the time I buy
convenient pancake mixes I don't
have any on hand and will have
to make from scratch.

Stack pancakes with a piece of
wax paper or plastic wrap in
between each one and store
in freezer zip bags.

PANCAKES

This makes four pancakes
made with 1/4 cup batter.
But because I am making
half dollar pancakes I
will get a lot more.

I sometimes like to add
chocolate chips to the pancakes.
I sprinkle them on once the
batter is already in the pan.

Ingredients

* 1 cup all-purpose flour
* 2 tablespoons white sugar
* 2 teaspoons baking powder
* 1/2 teaspoon salt
* 1 egg, beaten
* 1 cup milk
* 2 tablespoons vegetable oil OR
3 tablespoons melted butter
* 1 teaspoon vanilla

Directions

1. In a large bowl, mix flour, sugar, baking powder and salt. Make a well in the center, and pour in milk, egg, oil & vanilla. Mix until smooth.
2. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.

I got 60 pancakes made, from
cinnamon, to colored sprinkles,
to chocolate chip & caramel chip.

Each bag has 2 stacks of 6.
Each bag has enough for 2 breakfasts.
So a total of 10 days worth
of breakfasts.
That will last 2 school weeks.
Will give a variety of
different breakfasts each day.



Didn't get my rolls made yesterday
so might work on those today.
First a run to Speedway.

Kendra just called to say she
got me a bunch of free apples.
These people in Lockbourne allowed
others to come pick apples for
free and she got me a big tub full.

Last year I did applesauce with
all the apples she brought me.
This year I am thinking about
juicing them, freezing if
need be. I could make apple
juice for the kids school lunches.

back to being sick! Time to
build your immune system back up
with fresh fruits and veggies!!





We always use reusable containers
and lunch bags. I got plastic
containers specifically designed
for sandwiches. So no need
for lunch bags and baggies!
Always carry back up containers
and lunch bags because kids
will sometimes forget their
lunch bags at school.

You can find these items at the
thrift store for cheap!
Lunch bag about .90 cents
Sandwich container about .30 cents
Travel cups with lids about .50 to .90 cents

And I managed to find a ton of
thermos type food containers
at a church sale in their FREE box!!

Just checked the mail.

Got a coupon good for $2.00 off
Always pads at Walgreens.

Also got a letter from the kids
school explaining back to school
stuff.
It said we can go to a Meet & Greet
on Monday at the school to meet
the kids new teachers.
They will also be giving the kids
a FREE book bag full of school
supplies! I'm all about the FREE stuff!
Plus they need to find out
who their teachers are and their
new classrooms.

Just got done mixing up
a double batch (36) of no knead cake rolls
dough.
Now time to let sit and rise
for an hour.

I only have enough ingredients to make
16 roll sandwiches so I think I
will make some cinnamon rolls
with the other 20 for breakfast
and freeze them also :0)

To make cinnamon rolls from this
exact recipe:

Ingredients

* CINNAMON MIX
* 1/4 cup butter, melted
* 1/2 cup sugar
* 1 teaspoon ground cinnamon

* FROSTING:
* 6 tablespoons butter, softened
* 3 cups confectioners' sugar
* 1 1/2 teaspoons vanilla extract
* 2 tablespoons milk

You may double the cinnamon mix
if you would like.

# Turn onto a lightly floured surface; divide in half. Roll each portion into a 14-in. x 10-in. rectangle. Brush with butter; sprinkle with sugar and cinnamon. Roll up jelly-roll style, starting with a long side. Cut each roll into 12 slices; place cut side down in two greased 13-in. x 9-in. x 2-in. baking pans. Cover and let rise until almost doubled, about 20 minutes.
# Bake at 400 degrees F for 10-15 minutes or until golden brown. Cool for 20 minutes. For frosting, in a mixing bowl, cream butter, confectioners' sugar and vanilla. Add enough milk to achieve desired consistency. Frost warm rolls.

Allow to cool then place in zip bags
and put in your freezer.
Just pop in the microwave for a couple
seconds to warm up.

Divided the dough up into 16 rolls
and 17 cinnamon rolls.
They are on their second rise for
another hour.
I didn't use regular sugar on
the cinnamon rolls. Instead
I used brown sugar. In all
reality brown sugar is
regular sugar but with some
molasses mixed in.

By the time I am done making all these
breakfasts today I will have made
a total of 35 breakfast meals.
That's 7 weeks worth!!

each meal consists of either:
3 dollar sized pancakes
or
1 cinnamon roll
or
2 roll sandwiches
or
cereal

And I still have muffins,
waffles & french toast
and pop tarts
to make and freeze.
Not today though as I am
wearing out.

It looks a little odd when you first see it, but the Tummy Tub has earned lots of attention since arriving recently from Europe. The boys decided to do some metal
detecting today in the backyard.
Can't wait to see how many
holes I will find back there.
Anyway here is one of their finds,
a pair of glasses that looks to
be from the 50's - 60's.
This house was built in 1958
so I think it would be around that
time frame or within ten years of it.
Pretty cool.

I decided I wasn't done cooking or
baking for today, lol.

Started making more pop tarts
with some pre made pie dough
I got on a clearance.

I made this one up and didn't
have a recipe for it.
All kids seem to like peanut
butter and jelly.

I rolled them each out on cookie
sheets. One one I spread strawberry
jelly and on the other I spread
crunchy honey peanut butter.
It was a little tricky and messy
but I flipped over the peanut butter
one onto my hand and then put over
top the jelly one.
I used scissors to make triangular
pieces. Then used a fork to
crimp edges.
I don't have any more powdered sugar
for a glaze but found an open tub
of chocolate frosting I can melt
some and put on top.

Working on getting supper started.

Gonna do a Chef's Salad with lettuce,
ham, turkey, cheese, olives, homemade
croutons, boiled eggs & olives topped with
bacon ranch dressing.

Then as a side will tear apart the rest
of the deli bbq chicken.
Cut open some Italian bread loaves,
top with bbq sauce, chicken and cheese.

Got supper all ready to go.
All I got to do is pop
it in the oven and shred
up the lettuce.

WHEW I AM TIRED!!!

Got sausage patties thawing out
to make the roll sandwiches
with. We'll see if I do
that today or tomorrow.

Worked on getting 3 more
windows tinted on the Tracker.
Not at all happy with how the
back window turned out.
It has a defroster on it
and it's a real "B" to do
tint on those little lines
that run across the window.

Well I am about to fall over
and my body hurts. Just took
some ibuprofen and gonna kick
back and watch Ghost Hunters
for the next 2 hours if I
don't pass out first!!
