2-6-10

Well I started my new meds this evening.
Waiting to see if they work or not.
I goofed and ate a glazed doughnut
(it was calling out to me!)
not long after taking the Imodium.
Now I have a queasy stomach.

My hands and felt feel so swelled
and are throbbing. Ahhh!

5 more days til I go see the family
doctor. Then I will probably have
to wait longer to get the blood
work results. Man it seems like
I've had to wait so long just to
see the doctor. I guess the reason
is they have another doctor that's
away for 3 weeks.

Not one who sees doctors. Then when
I need one no one is available.
Just my luck! I'm so ready for them
to tell me what is wrong so we
can get to working on resolving it.

I'm bummed. I never got The Bag today
with my store ads. Going through
withdrawal at the moment not being
able to match up sales to coupons
looking for the best bargains for
the upcoming week.
I can always go online tomorrow
to check out Walgreens and Meijer.
Kroger won't have theirs up til Monday
as that's when their new week starts.

Kroger-Monday
Walgreens-Sunday
CVS-Sunday
Meijer-Sunday
Giant Eagle- Wednesday

Possible seed shortage? Has anyone heard of this yet?
This is the first I saw or heard about it.
Cucumbers, carrots, snap peas and onions.
If you find them buy them early as the supply
is limited due to bad crops last year!

I'm a newbie to gardening. Last year I tried the upside
down method in hanging baskets. I won't be doing that this year and will plant
everything in the ground. Upside down containers require
that you water them all the time. The water runs out of
the baskets. While I did get tomatoes and peppers to grow
it wasn't as many as it should have been had I planted
it in the ground. So I do not recommend it. Try container
gardening instead.
I do recommend a book called square foot garden.
It shows you how to get the most produce
out of a small space.
Squarefootgardening.com by Mel Bartholomew
Columbus libraries have it.

This morning's breakfast
Peach Cobbler Belgian Waffles
YUMMY YUM YUM!

I think it was Dollar General that I found
this peach cobbler muffin mix for around
a buck.
You can use pancake or muffin mixes to make
all sorts of waffles.
I especially like the Jiffy Muffin Mixes.
This muffin mix called for 1/2 cup milk.
I added just a tad bit more to make it
the consistency of a pancake batter.

These are great for freezing!
When needed pop them in a toaster then serve!

I've been reading my Best of Amish Cooking book.
Here are a few recipes from it:

WHITE BREAD

1/2 cup lukewarm water
1 package yeast
1 teaspoon sugar
2 cups lukewarm water
1 1/4 teaspoon salt
1/3 cup sugar
1 3/4 Tablespoon shortening
7-8 cups flour

Dissolve the yeast and sugar in the 1/2 cup lukewarm
water. Mix the 2 cups water, salt, sugar, and shortening.
Then add the yeast mixture and, gradually, the flour.
Knead until smooth and elastic. Place in a greased
bowl, cover and set in a warm place to rise until double.

Punch down. Let rise again. Put in two large loaf pans
or three medium ones. Let rise until double again.
Bake at 350 degrees for 1/2 hour.

Makes 2 large or 3 medium loaves.

-------------------------------------

PIE CRUST

4 cups flour
3/4 teaspoon salt
1 cup lard or vegetable shortening
1 egg, beaten
5 Tablespoons cold water
1 Tablespoon vinegar

Mix flour and salt. Cut in shortening until mixture
resembles small peas.
Combine remaining ingredients and stir into shortening
and flour. Let stand a few minutes.
Roll out dough on floured board.

Makes 6- 9" pie shells or 3- 9" double-crust pies.

------------------------------------------

APPLE PIE

6 cups apples, peeled and slice
1/2- 3/4 cup sugar (depending on the flavor of apples)
2 Tablespoons flour
3/4 teaspoon cinnamon
2 Tablespoons lemon juice
1- 9" unbaked pie shell and top crust

Toss apple slices gently with sugar, flour, cinnamon,
and lemon juice. Spoon into unbaked pie shell.
Top with crust, folding its edge under the top of the
bottom crust. Crimp to seal.
Bake at 425 degrees for 40-50 minutes, or until
crust is golden brown.

make 1- 9" pie

-------------------------------------------

PUMPKIN PIE

1 1/2 cups mashed pumpkins or butternut squash
1 egg
1/2 cup milk, heated
1/2 cup cream, heated
1 Tablespoon flour
1 Tablespoon molasses
3/4 cup sugar
1 teaspoon cinnamon
dash of nutmeg
1 Tablespoon brown butter
pinch of salt
1- 9" unbaked pie shell

Combine all ingredients. Pour into unbaked pie shell.
Sprinkle additional cinnamon and nutmeg over top of pie.
Bake at 450 degrees for 15 minutes, then at 350 degrees
for 45 minutes.

Makes 1- 9" pie

RAISIN PIE

2 cups raisins

1 1/2 cups sugar
4 Tablespoons flour
2 eggs, separated
1/4 teaspoon salt
4 Tablespoons melted butter
1 Tablespoon vinegar or lemon juice
1- 9" baked pie shell

In saucepan combine raisins, 1 1/2 cups water, and
1 cup of sugar and bring to a boil. Combine the
remaining 1/2 cup water and 1/2 cup sugar, plus flour,
egg yolks, and salt; add to raisin mixture. Cook until
thickened, stirring constantly. Remove from heat and
add butter and vinegar or lemon juice.
Pour mixture into BAKED pie shell. Cover with whipped
cream or meringue.

MERINGUE

Beat egg whites till stiff peaks form. Gradually
add 2 Tablespoons sugar while beating. Pile on top
of pie and bake 350 degrees till golden brown, about
10 minutes.

-------------------------------------------------

WALNUT PIE

1 cup warm water
3/4 cup molasses
2 eggs, well beaten
1 cup sweet milk
4 Tablespoons flour
1/2 cup walnuts, chopped
2- 9" baked pie crusts

Bring water and molasses to a boil. Meanwhile,
stir together beaten eggs, milk and flour until
smooth. Mix into water and molasses and let boil
until thick.
Remove from heat and add nuts. When cool, pour
into BAKED pie shells.

makes 2- 9" inch pies

1/4 cups sugar
2 eggs
3/4 cup molasses
1 Tablespoon flour
1 teaspoon vanilla
pinch of salt
3/4 cup pecans
1- 8" unbaked pie shell

Cream butter, sugar and eggs. Add molasses, flour,
vanilla, and salt. Stir in water and pecans.
Pour into UNBAKED pie shell. Bake at 450 degrees
for 10 minutes, then reduce temperature to 350 degrees
for an additional 25-30 minutes.

Makes 1- 8" pie
